INTRODU\u00c7\u00c3O<\/h2>\n\n\n<p class=\"wp-block-paragraph\">A qualidade do ambiente de trabalho e a seguran\u00e7a alimentar em estabelecimentos de alimenta\u00e7\u00e3o, como bares e restaurantes, dependem da correta implementa\u00e7\u00e3o de sistemas de ventila\u00e7\u00e3o e exaust\u00e3o.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A ANVISA, por meio da RDC 216\/2004, estabelece diretrizes para garantir que o ar esteja livre de contaminantes como fuma\u00e7a, gases, vapores e part\u00edculas que possam comprometer a sa\u00fade e a qualidade dos alimentos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nos ambientes de coc\u00e7\u00e3o, como cozinhas, fornos, fog\u00f5es e fritadeiras, \u00e9 essencial que um sistema de exaust\u00e3o eficaz seja instalado para proteger tanto os funcion\u00e1rios quanto os clientes, al\u00e9m de evitar a polui\u00e7\u00e3o do ar externo.<\/p>\n\n\n<h3 class=\"wp-block-heading\" id=\"11-normativas-e-diretrizes\">1.1. Coifa ou Captor<\/h3>\n\n\n<p class=\"wp-block-paragraph\">A coifa ou captor \u00e9 a pe\u00e7a respons\u00e1vel por capturar fuma\u00e7a, vapores, gordura e odores gerados durante o processo de coc\u00e7\u00e3o. Deve ser fabricada em a\u00e7o inoxid\u00e1vel AISI 304, com espessura m\u00ednima de 0,94 mm, ou outro material com resist\u00eancia equivalente ao fogo e \u00e0 corros\u00e3o. Higieniza\u00e7\u00e3o e Manuten\u00e7\u00e3o<\/h3>\n\n\n<p class=\"wp-block-paragraph\">Antes de usar ou instalar, verifique a compatibilidade da tens\u00e3o da tomada. O sistema eletrost\u00e1tico limpa o ar ao conduzir poluentes para o interior do captor, onde s\u00e3o retidos por um filtro eletrost\u00e1tico nas placas coletoras, por meio da ioniza\u00e7\u00e3o. Recomenda-se limpar os filtros uma a duas vezes por m\u00eas, dependendo da frequ\u00eancia de uso.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Para manuten\u00e7\u00e3o, desconecte o cabo de alimenta\u00e7\u00e3o da tomada ou desligue o interruptor. Para substituir a l\u00e2mpada, se necess\u00e1rio, desligue a coifa, gire o aro cromado no sentido anti-hor\u00e1rio e substitua a l\u00e2mpada.
