{"id":21048,"date":"2024-10-08T09:29:25","date_gmt":"2024-10-08T12:29:25","guid":{"rendered":"https:\/\/hayashi.center\/atmos\/?p=21048"},"modified":"2024-10-08T09:29:26","modified_gmt":"2024-10-08T12:29:26","slug":"instrucao-tecnica-it-no-38-2019-seguranca-contra-incendio-em-cozinha-profissional","status":"publish","type":"post","link":"https:\/\/hayashi.center\/atmos\/instrucao-tecnica-it-no-38-2019-seguranca-contra-incendio-em-cozinha-profissional","title":{"rendered":"Instru\u00e7\u00e3o T\u00e9cnica (IT) n\u00ba 38\/2019 &#8211; Seguran\u00e7a Contra Inc\u00eandio Em Cozinha Profissional"},"content":{"rendered":"\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<ol class=\"wp-block-list\">\n<li>OBJETIVO<\/li>\n<\/ol>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Estabelecer as condi\u00e7\u00f5es de aplica\u00e7\u00e3o dos requisitos b\u00e1sicos de seguran\u00e7a contra inc\u00eandio em sistemas de ventila\u00e7\u00e3o para cozinhas profissionais, visando a evitar e\/ou minimizar o risco especial de inc\u00eandio ocasionado pelo calor, gordura, fuma\u00e7a e efluentes gerados no processo de coc\u00e7\u00e3o, atendendo ao previsto no Regulamento de seguran\u00e7a contra inc\u00eandio das edifica\u00e7\u00f5es e \u00e1reas de risco do Estado de S\u00e3o Paulo.<\/li>\n\n\n\n<li>APLICA\u00c7\u00c3O<\/li>\n<\/ol>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Esta Instru\u00e7\u00e3o T\u00e9cnicas (IT) aplica-se aos sistemas de ventila\u00e7\u00e3o e exaust\u00e3o de cozinhas profissionais dotados de equipamentos de coc\u00e7\u00e3o moderados, severos e combust\u00edvel s\u00f3lido, em edifica\u00e7\u00f5es com \u00e1rea constru\u00edda acima de 750 m\u00b2, ou altura superior a 12 m.<\/li>\n\n\n\n<li>As cozinhas de uso residencial unifamiliar ou cozinhas pr\u00f3prias dos apartamentos n\u00e3o s\u00e3o consideradas cozinhas profissionais para aplica\u00e7\u00e3o desta IT, desde que n\u00e3o haja um sistema de exaust\u00e3o comum para mais de uma cozinha individual.<\/li>\n\n\n\n<li>REFER\u00caNCIAS NORMATIVAS E BIBLIOGR\u00c1FICAS<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">ASSOCIA\u00c7\u00c3O BRASILEIRA DE NORMAS T\u00c9CNICAS<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">(ABNT)<strong>.<\/strong><strong>NBR<\/strong><strong>10897:<\/strong>Sistemas de prote\u00e7\u00e3o contra inc\u00eandio por chuveiros autom\u00e1ticos. Devem ser obser- vados os requisitos de compartimenta\u00e7\u00e3o estabelecidos na IT 09 \u2013 Compartimenta\u00e7\u00e3o horizontal e vertical.<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n\n\n\n<ol class=\"wp-block-list\">\n<li><em>Damper <\/em>corta-fogo instalado entre a coifa e o duto de exaust\u00e3o.<\/li>\n<\/ol>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Sistema fixo de extin\u00e7\u00e3o de inc\u00eandio, apenas nos sis- temas de exaust\u00e3o ou ventila\u00e7\u00e3o das edifica\u00e7\u00f5es que ne- cessitem de prote\u00e7\u00e3o contra inc\u00eandio por chuveiros autom\u00e1- ticos, conforme o Regulamento de seguran\u00e7a contra inc\u00eandio das edifica\u00e7\u00f5es e \u00e1reas de risco do Estado de S\u00e3o Paulo em vigor.<\/li>\n\n\n\n<li>O sistema fixo de extin\u00e7\u00e3o de inc\u00eandio pode ser substi- tu\u00eddo por chuveiros autom\u00e1ticos espec\u00edficos para prote\u00e7\u00e3o de coifas.<\/li>\n\n\n\n<li>Recomenda-se a previs\u00e3o de 01 (um) extintor classe K nas cozinhas profissionais que utilizem \u00f3leo ou gordura.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n","protected":false},"excerpt":{"rendered":"<p>ASSOCIA\u00c7\u00c3O BRASILEIRA DE NORMAS T\u00c9CNICAS (ABNT).NBR10897:Sistemas de prote\u00e7\u00e3o contra inc\u00eandio por chuveiros autom\u00e1ticos.
